Gluten-Free Bagel Shop (Boiled ‘n Baked) Bagels


Here they are! Gluten-free bagel shop bagels, like the ones you used to buy. 🥯 Remember those? Recipe below made up happily in my kitchen over the last couple of days. 🤗 But also, are you tired? I am. I’m heading into PNW bear hibernation mode and I am baking and cleaning house and filling our pantry with food for winter and oddly enjoying being done with the veggie garden and just thinking about planting bulbs for spring.

Because I am tired, I appreciate how easy these are to make. It’s 10 mins of prep, 7 mins of boiling, and 36 mins of baking. Also, these are way cheaper than buying them at the store. Like a few cents apiece. And they’re boiled then baked just like the real deal. If you’re really busy you can skip boiling them and they’ll turn out lovely, too. 🥳 Let’s go!

How To Make Gluten-Free Bagels


INGREDIENTS
2 eggs
1/4 cup apple cider vinegar
1/4 cup olive oil
1/4 cup packed brown sugar (+ 2 Tbsp raw white sugar for boiling)
2 packets or 4-1/2 teaspoons instant yeast
1-1/2 cups extra warm water
3 cups + 1/2 cup GF flour mix (I use Namaste premade 1:1 organic GF flour with xanthan gum), spooned, not scooped, into the measuring cup so it’s not too dense
1-1/4 cups almond flour
1-1/2 – 2 teaspoons sea salt

Start boiling about a gallon of water with 2 Tbsp sugar. Preheat oven to 425 degrees F or 400 convection.

Using a mixer on low-med speed, mix sugar and all wet ingredients, except water. Add yeast and water. Mix again. Add dry ingredients except 1/2 cup GF flour. Mix on medium speed 3 minutes. Add 1/2 cup GF flour and knead by hand onto parchment paper until you form a long roll. Dough will be sticky. Coat your hands with olive oil to make it easier to handle. Cut into 12 slices. Form into rounds and poke a hole in the middle, forming bagel shapes.

Boil 6-7 bagels at a time in simmering water for 7 minutes, turning once. Remove, drain, and place in greased bagel pans or on parchment-lined heavy duty pans.

Reduce heat 25 degrees (so, to 375 convection or 400 regular) and place bagels in oven. Bake 18 minutes. Turn bagels and bake another 18 minutes. Remove. Cool completely. Enjoy plain or toasted with your favorite toppings. Store in a bag or sealed container
